Sneaky Sneaky

Happy Monday everyone! How was your weekend? I'm so glad to be at work, where my inbox is exploding, I'm being harassed by my customers, and my phone is not working properly. It's GOOD TO BE BACK! Can you tell I'm dripping with sarcasm???

Well my Sunday was pretty darn lazy, my one feat was making chicken parm. More on that later though, you want to know what my truths were!

Here were my alleged "truths"
1. I'm originally from Maryland!
2. I love designer clothes and stock up on good deals whenever I can!
3. I was a chemistry major in college.
4. I have a rough draft of a book in my desk, waiting to be read and edited!
5. I love to drive and will go anywhere at anytime!
6. My favorite hair color on myself is blonde.
7. I have multiple piercings and no tattoos!


And here is what is actually the TRUTH!
1. most of my family lives in Maryland and I spent every summer and winter vacation there as a kid. So I'm almost a Maryland native
2. I do like designer clothes, but I live in Forever 21 and Burlington Coat Factory- never mind the labels!
3. I used to write poetry and was published in the school paper, but I never wrote a book- too much work!
4. I hate driving. period!
5. I hated my blonde hair! dark brown hair rocks!
7. I have MANY tattoos, and only 1 piercing- and not even my ears are pierced!!

So looks like the TRUTH WAS: I WAS A CHEMISTRY MAJOR! No for reals people, I was! I LOVED science class and I rocked at Chemistry. I actually had wanted to move into a biology program at school so I could work at the CDC in Atlanta.. no joke lol. What happened? I had the Peanut! End of that! Now I'd probably go back to school to become a nurse, but I kinda want to have more kids, and I kinda think my house would fall apart if I had more kids and then left C and the kids there every night while I studied and went to class. So when C gets home, he will be going back to school- he wants to be a vet tech. He loves animals!

Well ... chicken parm! How do you make that so that your tummy doesn't hurt when you can't eat cheese or wheat? Easy, with rice mozzarella cheese and wheat free bread crumbs!

I took a classic recipe and literally saved myself 1,000 calories too. Cuz you know, you might as well call chicken parm, chicken phat pharm. Wow, I'm so stupid.

Here's what I did (recipe adapted from Clean Eating!)

1. made sauce- pepper, onion, diced tomatoes, tons of Italian seasoning, tomato sauce, mix, simmer, and enjoy the smells....

2. made chiken parmies- brushed chicken breast pieces in dijon mustard and dunked them in bread crumbs- cooked at 400 for 20 minutes
3. when the 20 minutes was up I topped the chicken with a little sauce and a hunk of rice mozzarella.

4. cook for another 10 minutes
5. meanwhile cook pasta according to package directions.. throw everything together on a plate and enjoy!!!!

I talked with C while I was making this, our conversation went a little something like this...
C; "what are you doing?"
me: "cooking lunch"
C; "sweet what are you making?"
me: "chicken parm"
C; "Oh my god... you never made that for me!"
me: "I didn't??????!!!"
C: "Oh my god, that's my favorite, how did you not know that? What's it like how are you making it?"
me:" with those bread crumbs I used to fry the..
C: " OH MY GOD!!!!!"
me: " you hate me right now don't you???"
C: "yes babe my sweet beautiful bride. I really do. Don't even tell me how it is, I don't wanna know!"
me: (laughing) "ok baby I love you too"

Poor guy!!! I can't believe I didn't know!

Haven't A Clue!

I have to say, you guys are all amazing- thank you so much for your comments on my last post. It was so hard to put something like that up because I like to keep everything pretty happy and non scary. However, in reading how honest everyone else is about how much they struggle, I decided to put that up there. Because I was tired of feeling like a fraud.
But we are getting back to the good things today! It's Saturday night, I should be partying like a rock star, and I am here waiting for 48 Hour Mystery to come on, so I can fall asleep : )
Last night I babysat my nieces and nephew. They were sooooooo funny! I have a video for you, but it's not working for me uploading.. so you'll have to wait to see it until tomorrow!

So what do we have for food now? Well I found these at Hannafords (um, do I live there or what?) I figured they might be a good buy and BOY was I right! They were delish. They tasted like tomato soup in a cracker form. My only beef was that they were a little on the dry side, these are definitely a "light airy" cracker not a cracker with substance. I topped mine with Herbs and Chives Tofutti "cream cheese". Sooooooooo good! They are gluten and dairy free, so you know I'm lovin' these!



What's next? I don't really have a clear plan as to how I'm going to attack my food neurosis and bad habits. I have many. Too many to list but I suppose if I am going to get over the bad habits, I'm going to have to start dealing with them. I promise you one thing, even if I were in a coma I would still be laughing, so my sense of humor will remain very much intact!
Speaking of laughing, I spoke with C a little bit about this today and he told me, "babe if your butt got bigger it would just make me want to bite it more."

Sweet. Isn't he? When he was home, it was alot easier to see the good parts of myself. But I love to hear him say things like that! It makes me laugh.

Bravery

Happy Thursday peoples, it's almost the weekend you know? I can't wait for tomorrow I can go to bed early, sleep late.. it will be glorious!

So last night I wrote up a whole post kind of dedicated to National Eating Disorders Awareness Week. I've been reading some great posts this week in reference to shining the light on eating disorders and how much life an ED sucks out of you as a person. I admit, once I wrote I thought to myself, "no one's going to read this". You guys want escapism, happy stuff.

I read a lot of blogs sometimes and I remember reading one in particular (I won't link back to it, because I'm sure I'd never be able to find it again) where the poster reached her goal weight and didn't know why she still hated herself. Why wasn't she beautiful yet? Why didn't she feel happy? It's because ED takes all that away from you. It takes away the ability to look in the mirror and like what you see because no matter how many pounds you lose, it's never enough. No matter how many hours you workout, it's never enough.

I was never officially diagnosed with any kind of eating disorder, but I know for a fact that how I viewed (and still think sometimes) myself was not normal. Fat and disgusting was my normal mantra and stopped me from enjoying pretty much anything in my life for a while. I restricted and binged, in a continuous cycle. If a guy rejected me it was because I was not tiny. If I got in trouble at work, it was because I was ugly and not cute like the other girls. I didn't eat cream cheese, ice cream, burgers, fries, good God there were so many foods I just wouldn't touch because they were "bad" foods.

I'll be first one to admit, I still struggle with this. The hardest thing to do with any kind of disordered eating pattern is to break the thought process that makes you think you aren't worth anything because you don't weigh 95 pounds.

I often don't post up what I eat because it's boring and the same thing over and over again.

I often don't talk about my workouts because I work too hard in the time I allow myself to work out. Or I don't do it all and feel like a slacker.

I don't talk about what I am wearing because I don't have a clue what to wear when my skinny jeans don't make me feel skinny.

There are a lot of feelings here I won't mention because I'm too scared.

Remember my mental health challenge from the beginning of the year? I fight that everyday!
Remember when I posted up old pictures of myself? I still want to look like that!


Well people, it's time for me to get back to work, but I definitely did not want to leave you without some pictures. Here is the kitty whom you all love.....

1. must be early risers- she eats at 5:30 am on the nose
2. must have three hands- two to continue with normal human tasks, one to pet her
3. must have a soft lap so she can sit in it
4. must also have alligator skin so when she gets mad she can scratch you without hurting you
5. must have catnip toys
6. must have earplugs- she is very noisy...

Anyone? Want her? Doesn't she look like she is CRYING out for a new family?!?!?!


Over the weekend I'm on a mission to get KTBWood's package sent out.... I didn't forget about you girl!!!!!!!!!!!!!
I have tried some new foods and wanted to give you guys a full review on them. Other than that I'm not sure what is up for the weekend, no skating this weekend bummer!!!

Phish Food

Howdy! Well it's Tuesday here (what day is it where you are?! lol that was stupid!) I'm glad you guys liked the method behind picking a winner, I was feeling lazy and didn't want to write all the names out, so I just ran in the bathroom and said, "Hey Liv- pick a number between 1 and 18!!!!" To which she said, "what?! Why?" I replied, "just do it!"
And there we have it folks. The most fair and impartial selection process in the history of blogworld.

So I decided to can my original post from the other day. It is no longer relevant I think.

My weekend round up is pretty quick.
1. Friday night: recover from staying out late on Thursday
2. get up early and workout before going to skating.
3. get the Peanut to go from this....

It was a great workout! She is going for a 6 week session, and I get to skate with her at open skate for only 6 dollars! whoooooo! We will be joining a roller derby in no time!!!

The rest of the weekend was a blur of running around and sleeping. I do count quality time sleeping as being busy.... just so you know! I branched out and made something new over the weekend as well. A recipe "adapted" from my Clean Eating mag I used to make the cookies in the previous post.

2 single serving cans of tuna
1 cup of quinoa (I love this stuff!)
huge hunk of frozen spinach
chopped green pepper
canned green beans (I used about 3/4 of the can- washed the beans...)
dressing:dijon mustard, olive oil, parsley flakes, S&P, cracked red pepper, apple cider vineager

method: cook quinoa according to package directions; cook spinach, beans, and peppers in microwave for approx 3 minutes or until the peppers are semi-soft

then, using your big saute pan, mix everything including the dressing together and saute for 5 minutes.

It was pretty good! The dijon dressing had a little too much bite to it, I might have used honey instead of the apple cider to "sweeten" it up a little- but overall.. delish, and supereasy.
Yesterday I had jury duty, so I didn't have to go to work! It was a productive day after I was released from my civic duty.. you know, stumbling out of a dark room into the bright sunlight.. and you say to yourself, let's go buy a hoodie! and get an oil change! And so I did. : )

I also had dance class last night. OMG I LOVE DANCE CLASS. It's so fun! Scumbaggy guy was there, but he was respectfully quiet. Phew! What I love is that our teacher really pushes us to put our own spin on things, so we do all these stpes and then can kind of put a little oomph into it.. to make it ours! Good for me, because I don't like shaking my shoulders (I have big boobs.. who wants to see THAT?!) but I do throw in all the hip shaking lol.

For dinner to prep myself for dance, I had..... a salmon burger and sweet potato fries. YUM!

Now you know why the post titile is PHISH food. I love fish!!!

Rebeca over at All Vegged Out left me an award, but I am on lockdown at work. If I can't get to your site easily (if you have your own domain.. ) I just cant read during the day.. which makes me REALLY REALLY sad! So girl... I'll take a look when I get home tonight!!!! Bahhhhhh!!!! (thats me crying..)

Carby Kind Of Day

Holy hell I am craving carbs HARD today! Not sure what is going on, but I'm sure it has something to do with the fact that I was out all night dancing ..... again. I'm not a drinker so I don't get dehydrated and hung-over; but I still felt the effects of shaking my tail feather all night.

Update on the guy who tried to smooch me. Informal truce called, we danced, we laughed, he tortured me with some crazy spins; but nothing beyond that. PHEW! I'm definitely going to chalk that one up to him being super drunk and stupid! Still... no more after parties!

So what's on your plate for the weekend? Mine is not too full, I kinda like it like that- roller skating lessons for Peanut tomorrow morning... I have jury duty on Monday! That's always exciting!

I have my workouts mapped out like a crazy person because I am still feeling like a blimpette with a queasy tummy. Hoping that some extreme yoga will do my bod some justice!

I have no pictures.. again?! Ok let's see if I can drum something up....

This was my snack... apples, pears, cinnamon, raisins, and a splash of apple juice (WTF?) to hold it together. Besides the pears making my mouth burn (they always do that..) it was yummy.

This was my pre-game dinner (plus two of the delicious cookies below) for last night. Hey.... it's "clean" ok?

This soup is yummy. It's like the grown- up tomato soup- it definitely has a bite and if you are a Campbells fan (like my kiddo) this might be a bit sophisticated for you. But I'm a classy beyotch, so this was RIGHT up my alley!

Price Check On Prune Juice Bob

Anyone know what THAT quote is from???

Well I don't know about anyone else, but I have been feeling quite sluggish, lethargic, and overall crappy. Why you say? Hmmm.... just take a look at my Valentine's Day post and you'll see why! I ate all that crapola! Plus Chinese food always does a number on my system. T-M-I I know! So what is my game plan for taking back my energy and oveall well being? I'm gonna be eating clean for a few days, see what that does to my bod. Hopefully I get a hot bod out of this......

Nah, I'm not expecting miracles.

Just reduce the bloating nasty queasey feeling I get all the time.

When I was in the grocery store the other day I saw this magazine..

I tell you it was the stir fry that drew me in. I haven't had that dish in AGES! Plus I saw the price of the meal $1.62 per serving? You know my cheap ass grabbed that up and paid... $5.99 for the mag. Ugh.
I poured over the magazine half the night and picked out a few recipes that I knew I had the ingredients for, and even a few I would have had to buy some stuff for. The thing I liked about this magazine is, it wasn't vegetarian/vegan and didn't try and shove the "clean eating" down my throat. Every recipe has only a few ingredients and only a couple of them, I would not be able to substitute out dairy free stuff. Excellent! I think I will be ordering this one!
So what recipe did I make first? Well I totally thought of Miss Jenny on this one- (aren't I supposed to be eating clean!?)

But I had to go out and buy some stuff! Thank God for tax money! The recipe called for sucanet. I could not find any sucanet in my store! But I did find antural cane sugar, which, smells like stinky feet. No lie! I was really off-put by the smell, but I used it anyway.


In went some chocolate chunks as well. Dark organic chocolate is naturally dairy free and although it has a stronger taste eaten plain, cooked and in something, I love it!

Holy deliciousness! These were incredible!

So what else do I have up my sleeve for clean eating? Lots of this grain:

Quinoa.. mixed with this.. red and green fresh peppers sauteed in marinara sauce and herbs (basil, parsley, pepper, oregano)

I didn't take a picture of the end result, but hey, it was pretty darn good if I do say so myself!

Here is my real Valentine's Day present. Presented to you by Uncle Same. If I had not had a tax refund this year.. I would not be wearing this... lol C picked it out and when we did our taxes earlier this month, I upgraded my other ring. I can't wait to show it to him!

Happy Late V-Day

Hello world! Here I am! I am indeed alive and stayed that way all weekend. Although I was very grumpy last night (only because I was tired though) not because I was home!

Well let's round up the weekend here. After my crazy night on Thursday I was SURE I would be dead to the world come Friday afternoon. Alarmingly enough I made it through the entire night, only crashing on the train ride home!
Where did we go? Disney on Ice at the Garden in Boston!

My three sisters and I went with the kids. Four adults and four kids = total madness! If you saw on the news about the wackos in the Park St train station dancing their way down the platform, that was us! Hahaha. It was a nightmare getting there but SO worth it!
The show started at 7 pm and at 7 pm we were still on the highway about an hour away (according to the traffic radio station) from the Garden. Time to abandon the car! We ended up at the Quincy train station to Pahk the Cah.

I did not take my camera into Disney on Ice because I thought it would have been confiscated. Boy am I an idiot! There were people there with VIDEO CAMERAS! GRRRRRRRR... we were literally 6 rows back from the ice, perfect seats! It was awesome! I thought of the lovely Miss Gliding Calm the whole time!!!!!

It was a great show, enjoyed by all and we were wrecked at the end. Who knew train hopping and sweets would catch up to us??

Saturday we had to recover fast though- we had a birthday party to go to!

Rollerskating!!!!!! I'll spare you the deets. Just know, I looked awesome out there skating and the Peanut is getting signed up to take skating lessons.. she needs some practice! lol
(I have some serious knobby knees there! lol)

Moving right along (I'm trying not to bore the pants of you...)
Saturday afternoon birthday PAR-TAY! For my little nephew Caiden, he's so cute. Walking, slightly talking, adorable! I can't believe how big all the kids are getting.



Here are two more love birds. Peanut and Tyler. Tyler is about 18 months younger than Peanut is, I watched him be born! We got along famously, I think it's because I held him for forever after he was born- we bonded and he still remembers that! Haha!

Tyler's mommy and I had a running joke in High School about how I was going to marry her younger brother. She took a picture of the two kids and sent them to him and said "these could have been your children." LMAO.
Alright, so who wants to know what there was to eat at the party??!! I do I do!



These were little cake balls of red velvet and vanilla cake mix. Mixed with cream cheese and baked for a few minutes, then dipped in chocolate. Gina made them, and dang they were tasty.

It would not be a party at Gina's house without the chocolate fountain!

So the party was all fun and games until someone got frosting up his nose...


Well the offical Valentine's Day was pretty uneventful. I got a surprise in the mail from my sweetie pie. I think he has a little too much time on his hands...

I also annoyed the cat. Look at how PISSED she looks! She really does have 57 facial expressions and 56.5 of them are MAD. Haha!

The Peanut and I went to the mall where she rode the carousel and we split a plate of Chinese food.


I saw my brother in law there as well (I guess everyone had the same idea.. shop!) with his kids.. it was a good time!
I loved reading everyones recap of V-day! I don't really consider that Valentine's Day is the most important of the holidays, there is a lot of commercial pressure to get the biggest and best of everything at every holiday. I would have loved it if my love was home with me. That would have been the best present ever! Bigger than any diamond (mine is coming this week btw lol) or box of chocolates! I will get my wish sooner or later!!!!!

PS. No dance class tonight, I have to wait until Thursday to face the drunkard fool who tried to molest me! We shall see what happens then!

When It Rains It Pours

Does everyone remember that it's Valentines Day on Sunday? Is anyone doing anything fun with their loved one? I am not! We will be chatting by phone, remembering how much fun we had last year on V-day. I miss him so much sometimes!!!! But it will all be worth it in the long run, all this time apart.

So anyway, I'm currently drafting this on Friday afternoon. I think I should be working, but I'm not right now. This weekend is a BIG weekend for us, so expect a photo recap of epic proportions- just probably very little involving food.

What is on the schedule?
1. last night, Jessica and I went all out and partied like rock stars. I'm currently going on 2 hours of sleep.
*pinch* yep, I'm still alive!
2. Tonight is Disney On Ice at the Gahh-den in Boston. Whooooo! Santa bought us tickets for Christmas.. 6th row back from the ice. Incredible! Unfortunately, I probably will not try and sneak my camera in. I'm not sure I want to try, they might make me toss it..... wouldn't that be awful? If I did that, they would probably scoop it out of the trash and USE IT.
3. Roller skating birthday party for a dance friend on Saturday morning. I'm going to either fall asleep on my skates or die trying to skate because I'll be so tired I won't be able to pick up my feet.
4. Baby Caiden's 1st Birthday party on Saturday afternoon. Complete with a heated bouncy house, catered food, and a few clowns, maybe Barney will show up. Whatever it will be, this baby is given nothing but the best of everything
5. Recover?
6. Sleep.

Good times no?

So last night... I'd like to just say, that I'm NOT in any way tooting my own horn or trying to make myself out to be a skanky-ho bag, because I'M NOT! But when Jessica and I go out I get hit on ALOT. Nevermind I have a pretty ballin' ring on my finger. Nevermind I tell people from the jump I'm not available. These guys see a cute face with a cute butt and some boobage and forget all manners.

Put it this way, Jessica and I ended up leaving the after party from going out dancing because it was either we go, or I was going to get molested. OK???? She did manage to snag the ONLY normal nice guy who respected the fact that I am taken! Beyotch! No I'm only kidding, I'm happy, I'll be babysitting while she goes out because he's a cutie and he knows my man from when they were little. : )

Jessica said it's because I'm the lowly white girl and I have perfect blue eyes. I think it's because guys want to see how far they can get before I either cave or freak. Well, I did neither. It was quite uncomfortable though because you don't want to be a bitch. But you don't want a guy trying to kiss a shot in your mouth either. Yea gross.

All I was doing was trying to hang with the people from my dance class because in class they are COOL, PROFESSIONAL, and FUN. Last night I saw the dark side! I'm still young enough (27 for those of you keeping score) to party it up once in a while. But I don't want to disrespect my man either.

Ladies with S.O.s. Did I do the right thing by not yelling at the guy? Should I have even gone to the party? Are these problems I shouldn't worry about? Keep in mind, I RARELY drink, so someone trying to do that to me? Not cool, even if it is my man, he knows I can't handle the booze! Jessica said not to worry, the guy was drunk, will probably be in class on Monday all red-faced and shamed.. I'm even embarrassed putting it out here, but hey my parents don't read this! LOL.

OK, nevermind, I have no pictures for you. Camera at home!

L.A. Fever

Well today is Hump Day and a snow day. I wish I were home with the Peanut today! Unfortunately, since school is cancelled and my mother is a teacher at the school Peanut goes to........ THEY got to stay home and I had to go to work! As always, customers before our safety!
We are supposed to get about 4-7 inches in my area and the further south you get into Rhode Island the more snow you get. I hate driving in the snow even with my big old SUV, so I hope my boss (who happens to drive a huge truck) gets a clue and sends the women home early like he did last year. Cross your fingers!!!!!!!!!!!

So yesterday I went to run my errands at lunch time and I get a call from my mom. The Peanut was sick! She had a fever and was feeling nauseated. So after clearing a few things off my desk when I got back I left again and picked her up.

Normal mothers would have taken their child directly home to bed.

Normal mothers would given their child with a fever Tylenol and chicken soup as soon as they woke up from said nap.

I am not. a. normal. mother!

I dragged my sick kid to Target and Hannafords instead. Here's the swag!



I know my daughter all too well and figured she would perk up with some Tylenol and brownies : )
This was my first time trying the Gluten-Free Pantry brownies and they did not disappoint! I thought they were going to come out crappy because the batter was SUPER SUPER thick- I could barely stir it around, but once I managed to spread the batter into the little pan we have, it was all good. We added butterscotch chips to the mix because... well.. just because.

After all that, I let the Peanut add whatever toppings to her brownie that she wanted. I repeat, I'm not a normal mother!



Later on in the day between the hours of 5 and 6, I did yoga. Has anyone ever done Kundalini Yoga? I have several Ana Bret and Ravi Singh DVDs and boy are they a hoot. Their workouts are incredible- both uplifting and hard to do. But they are goofy. The DVD format is: Ana doing the moves and Ravi doing the voice over. Then Ana does the voice over. My favorite line is in the beginning: "Be kind to yourself and grind." OH YEA BABY! But anyway I only lasted about 20 minutes before I fell over laughing, my 15 year old brain was not doing too well I guess! I did also do a power yoga tape (yes, I still have tapes! lol) that I LOVE. MTV Power Yoga with Kristin McGee- she is GREAT. Still my favorite tape after all these years (made circa 2001).

What else did I do? Oh yea! For dinner I had a brownie sundae! I'm such a wonderful example of perfect health right? Katie, here are the pictures! I've been craving a brownie sundae since I saw one that she posted up!


YUMMMMMMMMMMMM... perfect ending to the night. I did end up eating a snack later on, apples and peanut butter.. But I was just totally feeling a smaller dinner and just really wanted a sundae! Don't hate me!
So what's been going on with my knee? I don't know! It hurts though! I want to say I sprained it? But I can't say for sure without hitting up the doctors office and shelling out 500 dollars for an MRI. Yes, Virginia, there are people who pay out of pocket for medical treatments... I went to dance class with my knee brace on and it wasn't TOO bad. But then the yesterday I got up and BAM- I was limping around like an old lady.
My SIL and I are supposed to be going out on Thursday night (dancing.. it's what we do best. ha!) and I'm not sure I should dance that much. HMMMMMMMMMMM... what to do??

Anyway! I hope all my lovelies in the southern states are having fun digging out from the snow. I'll be doing that later! Have an awesome awesome day!
